Beef Back Ribs

So i have prepped them with a dry rub and they are in the fridge overnight. Its just a single rack so I'm thinking 225 for 3 hours till I try the famous toothpick method.  Any suggestions on something else to throw in there that would be around the same amount of time??  3rd weekend owning my #2 an on my 3rd smoke.
 
Even with only one rack, I don't think I would check until after 4.5 hours.

You could nuke some potatoes for 7-10 minutes depending on size send put them in on a rack above the ribs.
 
Added some potatoes and baked beans (w/ left over pulled pork from a previous smoke) and it turned out great.  I used 3 oz of oak and ran it 225 for 5 hours.  The toothpick method worked great.  The wife thought the potatoes were ok, the ribs we're great but to be honest the beans stole the show.  Can't wait to think of something for next weekend.

Beef ribs are kind of a tough one. I have looked for good ones for a long time and haven't ever really found any that in thought were worth buying. Most of the ones that I see around here are all bone and little meat.

You could try some pork baby backs or spare ribs next week, or my favorite which is Boston Butt.
 
My wife picked up some beef ribs instead of baby back ribs.  I tried them Saturday and smoked them just like I would pork ribs.  They came out falling off the bone tender and had a wonderful teaste.  I will be buying more in the future.  Smokin 2 does it again.
