BBQ Sauce Blind Taste Test Challenge

Well last night I did a blind BBQ taste test with some friends. I made seven sauces for the event, but two were so bad they were tossed out before we started. The two sauces were not included in the blind taste test.

For the testing each sauce was marked with a number and no one, not even I knew which was which. For the test I smoked some Boar's Head bologna, which was then sliced into small pieces. To start the test everyone dipped some bologna into each of the sauces, recording a score. Next we placed a small amount of each sauce on each persons plate. Each person then dipped their fingers in the sauces and recorded the score.

What I found interesting about the test was that I was not sure which sauce was which for the most part. In the end out of five sauce two were ranked the best, but the results were super close. The two best sauces ended up being the sauce I have been making for years and a new stout sauce I created for the contest, according to our test group.

Overall a really fun evening and a good time was had by all. I will post the Stout BBQ Sauce Recipe under Sauces if you are interested in giving it a try.

Greg, that sounds like something I would do! I love it! I would absolutely love any sauce recipe you'd be willing to divulge, including the 2 you've been making for years ;)

It was really a lot of fun and this is the first time I tried something like this. Making the different sauces was also educational, I knew that my sauce always tasted better after a few day. But most of the stronger tasting sauce continued to improve during the week. The sauces that hit the kitchen sink were both Franklin BBQ sauces, one 1/2 lb of butter.... The other with 6 T of espresso was just to strong. I did have a few folks that liked the sauce that had just 1 1/2 t. of espresso, you could just taste a bit of that coffee flavor.

While making all these sauces was a bit of work, I have found a new sauce that I really like. It was also interesting to see how sauces tasted different when you put them on meat.

While my sauce I have been making for years, I did end up with another new favorite the Stout BBQ sauce. Here are links to the top two, give them a try and let me know.
