Barrel chunks

I have some moonshine barrel chunks that are apple wood.    My concern is how thin they are.  I weight out 3 7/8 oz. but they are much thinner than the chunks I got from Steve with my #2 maybe about 1/4" thick.  Will they smoke too fast, catch fire? I plan on making a foil boat and use the screen.  Any suggests or advice?
 
John, since you are going to use the screen and foil it should work just fine. I bet that will be some good smelling smoke. I recently toured a moonshine distillery and loved the smell coming from the mash cooking.
 
Thanks Jimmy,  it was some very good smoke.  That wood is definetly a keeper. Ribs turned out good. Still needed more smoke. I dont know if because of thickness or weight.  It seemed like smoke died out after 3 hours. First time for me with this smoker and the wood. I think next time I'll go with 5 oz.
 
John, glad to hear it worked out for you. Everyone's preference for smoke is different. The amounts listed on the guide are just a good starting point. I like a stronger smoke flavor on most of my meats so I tend to go higher with the wood amount than most. That's part of learning and finding out what you like best. Nothing wrong with experimenting with more or less wood than the suggested amount if it works for you.
