I think I am with Dave on this one. I would eat these all day long too. But I don't know that I would have enough patience to wrap all those bacon onion rings.
I think it might be tough to do in the SI though since the bacon won't really crisp up unless you have a bypassed Auber where you can crank up the heat. It would be a great application for the grill though. You could smoke them in the SI, then move to the grill. But that is another step that I am not sure I would have the patience to do.
Maybe it looks harder than it is. So, if you try this let us know how it goes.
