The ribs were fantastic, i barely got them on the serving tray before they vanished. Two racks vanishing priceless.
Thoughts:
Smoked ribs for 5.25 hours at 235 with an hous and a half rest.
The ribs were firm and fall off the bone good. Real good smoke penetration and the rub was tasty.
Next smoke 5 hours and a rest. Since i have the auber trying to dial in the optimal temperature.
