Need to have some good ribs today.  Purchased two racks of babies from BJ's yesterday. The #3 was prepped and we are ready to go.

2.4 oz of cherry wood, used Meathead's memphis dust (I microwaved the rub for 30 seconds before using, really brought out a lot of flavor).  I brushed the ribs with a little vegetable oil and rubbed in the rub, let rest a couple of minutes and added a bit more.  Currently in the resting position until 945am.  I will be adding a water pan/can with hot water. I want to get to room temperature.  The plan is to cook at 240 for 5.5 hours no peeking.

BTW, I pulled the membrane off starting in the middle and it took less than one minute for each rib.

I will post some pics of the final product later today.

All-

I learned a little secret today.  I let the ribs rest for 45 minutes and they actually tasted better than right out of the smoker.

I let the ribs smoke/cook for 5:45 due to the under 40 temperature.

Very pleased!
