Quick question.  Is time and temp the same no matter if I am smoking 1 rack or 4?  I am only doing one rack for first smoke in model 1.  I know making more is preferable but we have other foods as well to eat.  Thanks
 
Jim, the time may be a little less for one rack of ribs, due to the fact that the smoker will overcome the cold meat temp faster.  I'd probably start checking them at around 4 hours, then go another 20 minutes at a time, until done. 
 
I smoke one rack all the time! That's what I love about these smokers. When I used my Weber Smokey Mountain, I felt like I had to load the thing up, because it required a bit of effort, and that effort wasn't worth it for one rack of ribs, not to mention the same amount of charcoal was needed/consumed for 1 rack or 8 racks. With the #1, there is no guilt in smoking one thing at a time. They are so easy that you can smoke every day with the SI's, so you don't necessarily have to create extras for leftovers.
