I have fours racks on the #3 with almost 3 oz of apple and hickory wood.  Water pan and some memphis dust rub.

I dry brined the babies for 2 hours.

The smoker is set at 170 for 30 minutes and 235 for the remaining of the cook. I am think 5 hours in total, maybe 4:45.
