Anyone ever install an SI in their kitchen?

Odd question, I know... In a few years my wife and I are totally re-doing our kitchen and I got to thinking that it wouldn't be that hard to install an SI permanently while we are at it. I would plumb up the smoke hole to exit outside with a switched fan in line. The fan would activate via a switch that before I open the door, I would click it on for say 30sec then open the door. Any input?

And probably too small a range hood dedicated to the smoker, if it was given any thought at all.

My friends who have tried either grills or smokers in their kitchen have regretted it and never really used them.

I wouldn't count it out, Josh.  I would check with some of the BBQ joints that have have electric smokers in their kitchens.  I think, with proper venting, it would be highly-doable!  Many restaurants use smokers like these - just need to find out what they're doing.

Hmmm... Excellent idea... I will have to see what they do... I definitely don't need a"restaurant quality" smoker but it would be nice to see how they have it plumbed up and such...

I have a large cookshack smoker at work and find that the hood catches almost all of the smoke but if you open the door during the smoke you will be in trouble.
