Punker X

Just got my number 1. Very little experience smoking. Years grilling and trying to smoke with the little cast iron box on my gas grill.  Looking forward to finally doing some real smoking.

Congrats , on your new purchase ( one ) and like myself when I purchased my new smoker I had very little experience other then a smoker box on the Barbie ( gas ) and with all the helpful information provided here from everyone on this forum you should not have any problems at all considering your smoke more or less over a period of time will be a set it and forget it experience . Where in Mich is your location ?

Welcome from Delaware, Punk!  Yes, I used to use the little wood box on the gasser, but you will find that the SI #1 will produce a much better smoked product!  While waiting for the #1 to arrive (which won't take long), take some time to look through the forum -- lots of good recipes and methods to produce great Q!  Cheers

I'm in Flint, east village, college cultural neighborhood.

Got the Smoker Thursday night. Seasoned it yesterday.

Welcome from Texas! Lots of info about your new buddy here to help you get going. Season that bad boy up then throw a hunk of meat in it and get ready to enjoy what we like to call EZQ. You'll see what I mean.

Welcome Punker X for Saint Augustine Florida.

You are going to be really happy with your new smoker. Make sure to take some time and read the forums!

Thanks all. Ribs turned out good. The meat wasn't the best and used too little wood for my taste and could have cooked a bit longer. But for first time it was really good.

How much wood did use and how long did you smoke the ribs ?  Go to............... guide to smoking times , temps and woods ......which has a great chart to use for a guide that I find is very helpful in the recipes section of this forum .

Hey Mike, I have my 2nd rack of ribs getting happy in the fridge. I cooked mine at 235 for 5 hours. Pulled them and put some sauce on them and back in for 30 min. Pulled out and they were really good. Also you might want to pull the membrane off the back of the ribs. Divotmaker has great idea on easy way to do this. I too have the Little Guy and he does have a serious attitude.

I got the "middle out" technique from the Jeff Phillips site - works great!  And yes, the "Little Guy" is like the wolverine of SIs!  He's small, but quite the formidable warrior! ;)
