I tried another Canadian Bacon recipe with better results. I followed the attached recipe. The flavors are very strait forward and I like the history in the recipe. The variation will be your wood. They call for apple. I used an apple/cherry combo. Hickory, etc. sounds good too. We served this as part of a grilled cheese sandwich with great results. I lightly grill the bacon slice first. Bacon and eggs are calling but my wife wants it in scalloped potatoes.
