I think i'm getting the hang of it..
Third time i'm doing ribs, first 2 or ok, nothing spectacular (baby backs)
Today i bought 2 full racks from the local butcher ($3.29, i should've get them yesterday from Restaurant Depot, $1.89) and start playing again.
4 hrs at 250 (or whatever SI is all the way up, i didn't use the Auber), sauced up and back for another ~1.5 hour. Scoring myself would be 8.5/10 - i should've use just a tad more wood, otherwise GREAT!

i did not weigh it, about 1/4 of a smokinlicious cherry block ..
I assume 3-4oz... cherry is mild to begin with and this box is around Christmas last year, a bit too dry i guess. Not a biggie, though...
I usually wrap the ribs and don't use water but now i ran out of paper and used water.. i will try a few more times, see if i can match the taste/texture with WSM, now was very, very close! Happy camper here!
Last weekend i've done 2 tenderloins, those came out perfect! (plain, not stuffed)
Overall, i like the SI, a bit of learning curve (old habits die hard) but i'm getting there...

I agree old smoking habits die hard and this smoker has it own rules.

I tend to go with what others suggest and then make mods later on. Overall the best smoker and the most used smoker I have ever owned!

Nice job, Pete!  As for the wood, my smokilicious blocks typically weigh about 3oz and I put the whole chunk in the smoke box.  Do you have bigger chunks that need to be chopped up?  I think my order was the double filet and most of the chunks fit perfectly in the box.
 
Hey Pete those are mighty fine looking ribs. Also if you have left overs they are good with a cup of coffee for breakfast.  :P
