3rd smoke a split chicken

My wife didn't want brisket or pork again so I decided to do a chicken. I decided to split it since I haven't had luck with smokes being on time. I started it at 1445 @ 250, after brining it in Tony's brine recipe for 3.5hrs. I went simple on the rub and bought lawrys poultry seasoning. I used 2.25oz mix of pecan and peach

I forgot to take pics but I will when it comes out.

it is 1800 and its 151/149. Is this normal? I've read that 3hrs for whole chickens and that splits are supposed to be less time.

Hi Kevin, I have not smoked chicken on the SI's yet. But, from what I read you use 250 degrees and should be done in 2-4 hrs. at 165 internal temp. for whole chicken.  Do you have the chicken up high in the smoker? I will let others post as just going by the smoking guide.

Kevin, whole chickens I do (at 250, not 225) are usually done in 3.5-4 hours.  When you say you split it, to you mean you spatchcocked the bird (cut out the backbone, and laid it open flat, or just cut it in half?  Not much difference, just curious.  How long did it finally take to hit 165?

Opps, looks like the eyes failed, I earlier checked the cooking chart and misread it. As you say Tony, it says temp. 250..  I'm bad :-\ I have changed my earlier post. Sorry for the mis-information.

I cut the spine and some of the rib cage out. It took prob another 30 min on the grill on med setting with the indirect burners on high. Don't have the temp of the grill while finishing.

They came out great, they just took over 4.5hrs for >4.5lb chicken. Seems a bit much. I haven't bought the Auber yet but I will be now. I just have to figure out which power chord. I think its the Bradley type. Ill look it up.

Another issue I ran in to the 2 new probes I bought from thermoworks were telling me completely different temps by 7 or 8 degrees. I will be testing them tomorrow on boiling/ice water.

Hey Kevin, Check this site out for the Auber Pid, it is where I purchased mine.
Right now they are at $218.00 for the one needed for the SI#3.

Just a suggestion.

Yes thats where I was looking, But it gives you three choices for power cords. I was thinking the bradley was the correct one, but can't find anything to back it up. I don't want to buy the wrong thing.

Hi Kevin, Not sure what those extra power cords are for they could be for Bradley smokers. As they come with an attached power cord that is soldered in. This I know since I changed mine to a 50 degree below short power cord. Prior to ordering you could call on Monday and ask. Also make sure you get the permanent wall mount sensor at $2.00 extra and from Steve they are $29. If you order from Steve they are $11.00 more which is what you will pay in shipping at the Auber. If you look at the back picture of the Auber http://www.auberins.com/index.php?main_page=product_info&cPath=14_28&products_id=381
you will see the power cord is attached right under the red power switch. Also the female plug that is marked as Heater is where you will plug in your #3. It does look like Steve ships his for free. Either way you will be happy with it. I have not really heard any bad posts on them.

That is great Kevin, one word of advice, do not use the rocker switch http://www.ebay.com/itm/181023632317?_trksid=p2060353.m2749.l2649&var=480201326627&ssPageName=STRK%3AMEBIDX%3AIT. But, just get a dpdt toggle switch http://www.lowes.com/pd_87177-1781-GSW-123___?productId=3379558&pl=1&Ntt=dpdt+toggle+switch. Is very easy just drill 1/2 inch hole to the side of the red light on top of your smoker. The bypass is very easy to do. If I had the switches to do over again this is the way I would have gone. If you need any help let me know. I really think I can do this in my sleep. As I did modifications on both my smokers.
