3D issue

Hello:  bought a 3D Feb of 2016.  Huge hailstorm cut through Colorado Springs and destroyed a swath of the city including the digital panel.  Replaced the panel and temp probe.  Started 7:00 AM today and After 5 1/2 hours on a 14 pound brisket smoke panel flashed "end" and emitted an intermittent high shrill beeping.  instant read thermometer shows internal temp at 127.  Something wrong because this has happened a few times where it shuts down as done nowhere near the temp set.  There are a few slight indentations in this new panel so not sure if some other hail I am unaware of did damage or what.  Ideas?  Insights?  Feedback?  Help?  Thanks, Jeff
 
Jeff - Please check to ensure your PID settings are as follows:
3D and 3.5d
P=60
I=800
D=150

Old Sarge.  Got a brisket going right now for Mother's Day.  Will try it in the next few days and report back.

This doesn’t solve the issue, but I’ve stopped using the cook to temp for similar issues you are experiencing. I had a few smokes stop when I was using the program style smokes. I’ve only been setting a smoke temp now and letting it go until my Chef Alarm hits my desired temp. Going this route, I haven’t had the issue. But I need to check the PID settings as well.

Thanks.  Know little to nothing about Chef Alarms.  Would you suggest wireless?  A unit that would sit on top of the smoker?  Thanks for any advice for this.
 
Well folks, I have never had a problem with cooking to temp. I just make sure that all steps are '0' except for box temp and meat temp. Cooking to time is the same; set box temp, time and '0' for the remaining steps.
 
Chef Alarm is just my thermometer I use, made by Thermoworks. At some point, I will go wireless, perhaps with the Fire Board that has an app you can use on the phone. Others here have experience with it. The Chef Alarm I use works well, I have multiple probes that I use and plug in to check temps. It works well. FireBoard would be something that is a nice to have.

Like Old Sarge States, I shouldn’t have issues with using programs. I just haven’t gone through the trouble shooting. I should, but I’m fine with how I’ve been using the PID for now because I am home while smoking. If I were to leave the house, that’s where the program is helpful.

Doing my first smoke today (chicken roaster).  Using a Thermoworks Smoke wireless unit.  They are on sale through today on the Thermoworks site at 15% off.
 
I’ll check PID settings.  Tinker around with the ideas you all have shared
And see what ends up working out best.  Thanks for the input and ideas
 
Well.  Checked PID settings and they were as suggested by Old Sarge.  Prepped some wings and legs.
Set smoker temp at 250 and internal meat temp at 165.  1 1/4 hour in end alarm went off and flashed.  Checked internal temp and was about 157.  Shut unit off.  Reset and no change.  Shut unit off and cleared everything except smoker temp and no change.  Still showing end and alarm beeping.  Not a tech dude at all so at a loss.  Wondering if I might need to buy a new panel?  Other final ideas?

You might need a new controller or it could be as simple as replacing the meat probe. If you checked the IT with a separate instant read thermometer and it read within a a couple of degrees of your controller, give Steve a shout on email and ask advice.  I don't think an auto tune would fix it so you would need a new controller.  But Steve does have a few tricks up his sleeve.
 
IT was about spot on with instant read thermometer.
Will reach Steve.  Guessing a new controller will be in my near future.  Thanks for the input.
