Happy New Year.  Off and running with pork, kraut, taters and beans on the #2.

35 degrees and a brisk 15 MPH wind reminds me why I didnt get the WSM!

Pork rib porn!

4 lbs short ribs, full slabs with good extra meat at the ends.

5 1/2 hours 230 degrees, no peek, apple juice bottom left.  2 oz cherry and 1 oz mesquite.

www.oakridgebbq.com  rub which seems to give a good sugar "bark".  Sweet and a touch of heat.

Looks great John! How was the tast test? Also snuggle the juice box up to the wood box and you will get full moisture value.

+1 on pushing the juice tin up against the smoke box. This is needed for the juice to get hot enough to be effective.
 
Taste was best yet.  I love the sugar and light heat of that rub.  I'll kick the juice to the middle next time.  Looks like it did go down a bit.  Thanks

Ribs were 9 wide at least, it was pork!  Butcher shop, I guess those are "spare"?  Had some good thick pull apart meat at the end too.

 
Look great.  Yes, they are spare ribs. A tip,when i fill the water pan i warm the liquid up for a minute in the microwave. I do see evaporation in the water pan.
