#2 On The Way

  Well just placed my order for my Number 2 tonight,, I cant wait,,,
I have been like a kid in a candy store ,, So I got out in the shop and dug out some scraps of wood and a little steel and put together a table to set everything up on...
My burner on my bullets been burned up for almost a month and I'm going into Q withdraw...

That's a nice little smoke station you've created, Puddle.  That cooler storage underneath will come in very handy ... and that steel deck will clean up very well for grease or meat juice spills.

One thought:  if you've got a decent restaurant supply nearby you could grab a cheap bolt-on speed rack bartenders use on the front of their wells for liquor storage as a handy little catch that's quickly accessible for sauces, your beer, tongs or a spatula, your beer, or even a thermometer caddy.  Or your beer.  ;D

This is what happened last time I got the smoking bug as bad as I have it right now...

  It smokes like a champ, that's why I said the #2 would be fine for me,,, I can always fire up my stick burner if I have a lot of people to smoke for...I just get lazy and don't want to watch the smoker for 12 hrs but it makes great Q..

Great smoke station, John!  I've been going to throw something like that together, just haven't had a lot of extra time.  I'm an old carpenter, so I can't bring myself to "buy" a cart!  I like the way you think! ;D
 
I know what you mean Tony,,,
I try not to buy anything I can build or fabricate myself..after I got it done I got to thinking I might build a drawer in the middle, under the right side... so its a work in progress..

  Well my #2 got to the house yesterday,5 days total shipping with a weekend thrown in,,
Set up and seasoned it last night,,,

Temp empty went to the high side at 318 and on the low side when the element cam back on was 260 and would continue to drop to 255 before it would start to creep back up to 318 so I'm really happy with the heat so far...
now to get some meat in there...

I think I'm going to love this little smoker..

Do you guys think I need more room under the smoker for air or will it be OK to keep the wheels off..

Looking good, Puddle.  As long as there's still a gap between the bottom of the drip pan and the deck on the cart you built I think you're good.  You could always pull the drip pan an inch forward to promote air movement through the bottom drain if you see any issues, however.
 
Heckuva good-looking rig, PJ!  Definitely keep the wheels off.  I'm pretty sure you remove them for the commercial cart they sell, so I don't see why you need them on.  Plus, it won't be as likely to move around in some wind.  That sucker rolling off the table in a wind storm would make you really sick.  Nice job!

I think I will make some thick rubber pads "1/2" to go under the feet just to keep it from moving and go with it like that unless it starts to give me some problems with the air flow...

I wouldn't think it would ever cause a problem with air flow.  There's only one tiny drain hole in the bottom, and the drip pan restricts that (which I think was part of the design).  Bet it'll work great that way.  When I build my own, I'm going with the wheels-off option.  I think I'll remove them and mount them on the station instead.

Necessity is truly the mother of invention, Puddle.  Why do I have the sneaking suspicion that you'll keep modding this thing for a while?  ;)
