#2 spankin' new

Just finished seasoning my new #2.  I've been smoking for about 10 years on
A very basic unit, no rheostat, no insulation, wrapping and unwrapping insulation to control temperature, throwing in wood chips here and there. My son suggested I step it up a bit, and did I ever. It's a beauty. I have my smokiLicious wood, am waiting for my thermoworks Smoke unit.   I ocean fish summers and do a lot of cod, haddock, cusk and mackeral.  I'm looking forward to doing ribs or a Boston butt soon, and then more racks of fish this summer.  Thanks for all the great advice on this forum. It's a fun and tasty hobby. Don't your friends and family love it😎😎

Welcome to the forums, Bill, and congratulations on your new smoker!  I was new to smoking when I got my #2 a couple months ago and have just fallen in love with it.  Everyone here has been extremely welcoming and helpful to me and I expect they'll do the same for you.  :)

You are going to love it. After about twenty years of smoking on a Grill Dome ( BGE knockoff) which provided some mighty good smokes, I recently decided to order the SI2. It has opened up a whole new world of smoking ideas for me. My next projects are smoked salmon then some Canadian bacon. Happy smoking!

Bill, one of the reasons I selected my 2D was that it was small enough to travel with me to Arkansas for trout fishing on the White River.  Smoked trout is wonderful!
