Jerk Pork and Corn Bread

Nothing better then Jerk Pork and Corn Bread for Dinner.

My normal cornbread is just Trader Joe's with some Datil seasoning. But after reading Dave's post, I took his lead and added cheddar cheese and creamed corn. Wow, super moist and my wife and I will have leftovers for breakfast tomorrow!

It was buried at the end of one of Greg's posts.  And I did smoke the last batch I did and finished in the oven per Greg's recommendation.  It was also very tasty.

Lazy man's corn fritters  :D  Mom made that several times growing up, but without the cheese (and probably sour cream too, but that's a guess)...I do believe I'll make some while my next batch of pulled pork is resting.
