I didn't notice an odor, they use it on my machine once every Monday after I shut down. That picture is of one of the main smoker door. It was sprayed then almost immediately wiped with a rag.

I am not sure where the restaurant gets it but here is a link http://www.foodservicesuperstore.com/challenger-concentrated-cleaner-degreaser-gallon-size-ea.html to a food service company.

Brian,

Have you tried it on your smoker yet?

Thanks Greg

Wow, that's some strong stuff!  Looks like it takes it all the way down to the metal.  Do you re-season after using this?  I guess you probably don't have to in your gigantic stick burner at the restaurant, but we probably would, if we used it on an SI?

Brian, I bet your constant smoke, at temp all day, does the trick to keep it seasoned.  Looks like some good stuff; I'll have to give it a try!
