Spatch what?

I was itching to try a little chicken on my "just getting broken-in #3) so I called every farmer I know and none of 'em raised Spatch-cocks! I don't know where you fellers got yours but I decided to use some Yankee ingenuity and make my own. 🐓🐓🐓
Anyhow, I already had these Boning shear things but they are so sharp and powerful that they scare me. After I use them I always feel the need to count my fingers!
Here's the before:

Was there a lot of sugar in that rub, or is that smoke build up? It is pretty dark.

Yeah, there's some sugar in it for sure. Only a little over 2oz of pecan wood for 3.25 hrs at 235 then finished over the gas unit for 20 min or so.  Good quality organic 5.5 lb bird came out amazingly well with little effort. Nice moisture content too. Some of the best thighs and drums I've had. Beginners luck or is it just the way these electrics work?
