I dabble in pizza, Greg, but lots to learn!  I do make my own dough with Caputo flour, my own sauce, and only fresh ingredients.  I'll definitely be checking this out!

I am serious about dough, sauce and most things that go on pizza and make most of my own. Always willing to share my experiences and some tips.

Anytime, I have sausage recipe that is over 50 years old that I made some improvements on. Folks say you cannot get a high quality pizza in your home oven.... Well, you can it will be better than the local pizza place. Its all about temp, type of stone, I don't use a stone and what you add to the crust to get it to rise and brown up.

To get a really good crust you need fired oven bricks and a hot oven. This I learned from growing up in an Italian neighborhood.

To get a really good crust you need fired oven bricks and a hot oven. This I learned from growing up in an Italian neighborhood.

A really good stone is needed and a really hot oven. I get around 580 degrees on my stone and the pizza is great in about 6 minutes.

To me the secret is in the sauce, also I still remember the Italian sausage recipe.
