If you have previous smoker experience but new to SI or electric smoking there is one lesson I've quickly learned. I come from long experience with a propane smoker and everything takes much, much longer with the SI. For example, with my propane unit, I could reach optimal box temp in minutes. My loaded electric is taking an hour and a half to reach and maintain desired box temperature. This in turn translates into longer cook times. All this said to just help make the time planning for smokes work better for you if you've come from a different smoker background.
