Awful Brats

 Well after a year and some change I finally bombed on a smoke with my #2,,, :o
Good old Johnsonville Brats straight up about a 1 OZ of peach wood 225 for about 2 hrs and a little, with a water pan..
Came out awful, chewy, flavor was not very good at all..
 No idea why , but maybe longer and little hotter,but I guess if you do this long enough its bound to happen,,,
I figured I would do them for a quick meal insted of on the grill, well that didn't work out.
Oh well... 8)
I will have to knock it out of the park next time,

I have had pretty good results at 250 for 1.5 to 2 hours but a hot grill is better.

Maybe too much moisture from the water pan?  I know our sausage pros don't like extra moisture!

I will have to try without the water,, but I'm with PB its hard to try again when they rock coming off the grill..
