Smoked Ling?
« on: November 15, 2014, 12:37:35 PM »
Has anyone ever smoked Ling fish before?  I have some that I am thawing out from fishing trip in the Gulf this past summer and am planning on giving it a go this afternoon.

I'm planning to brine it similar to al_sfbay's brine for salmon:

1 c kosher salt
1/2 c white sugar
1/2 c brown sugar
2 tspns crushed peppercorns

I"m about to start brining now.  I may also coat with Maple syrup before putting it in my #3.  I haven't decided on that though.

Anyone have any thoughts on that or have any experience with Ling?

It'll be a first for me as well.  Love smoking salmon but had ling in my freezer.  We will all know in about 2 hours!

It turned out awesome!  I had brushed the ling with maple syrup before putting it in the smoker.  Excellent!!

It did take a little longer than salmon because the ling is thicker and more dense. Next time, I'll smoke it at 180 instead of 150.

One little suggestion on the pics - size them smaller so they're easier to view.  I just open them in MS Paint and resize to 45-50%.  That way, you can see the whole pic without scrolling.
