Just got my #2 the other day! Can't wait to smoke up some salmon. You guys have some great posts in this forum. I look forward to trying some of your great recipe's!

Welcome again, Paul.  You won't be disappointed...I smoke something pretty much every weekend in the #2 and really look forward to it!   This weekend...chicken thighs today for pulled chicken, 2 racks of ribs tomorrow.  Cheers!

I tried using Alton Brown's recipe http://www.foodnetwork.com/recipes/alton-brown/smoked-salmon-recipe.html which was a bit salty.  This weekend I tried again with 1/4 cup salt and 1 cup of sugar with much improved results.

Mike the Alton Brown Recipe looks good. It is pretty basic and a good start. I use this one http://smokinitforums.com/index.php?topic=1820.0 basically the same thing but with a few spices added. You will find your own preference. Alton's recipe calls for chips or sawdust, in the SI the blocks or dowels will be fine. However if going low temp for a cold smoke, 100 or less I prefer chips. Good luck and post some pictures of the before and after, it makes us all feel included.
