I'd try some at a week, Bob; it'll be really good.  The stuff that goes 2-3 weeks will be great, but so will the week-old stuff.  Just needs a little time to settle down and let that smoke flavor penetrate.  No way I'd wait 3 weeks before sampling! :o

I usually wait for two weeks before sampling, but it hits a big threshold of goodness at 4 weeks.

We're past the 3 weeks mark now ;) Oh my god! taste is awesome! found out the pepper jack with a piece of jerky and a cold adult beverage make a heck of a good snack!

Opened some last week-end, 4 weeks mark, can definetely noticed the difference from last week, gonna have to hide a block of each and try to forget about em!
