No problem, Phil!  Yep, good chewy bark is the best!  Try the 235 route; I think you'll like it!

Just read Tony's post on brined butts. Even tho its the recipe I used, I got it from the guide and not the post. I wish I saw the post before I did this smoke... I had the exact same concerns about my brining bag and instantly ordered a container from Amazon while the butt was brining. I double bagged it and it still leaked a little so we had to figure out how to prop it up against other stuff to hold it steady. The container is going to be so much better. Just make sure to measure the space in your fridge so you know which container can fit.

Phil, if you use bags, be sure to put the bags in a large pot in the fridge, just in case they leak! ;)
