I'm going to try spinning this recipe today for a roasted potato. Going to try followed recipe but for quartered potatoes.

I think I'll try my Nu Wave oven.  It is set up just like that with the pan and rack.  And best of all, that would mean that this is now camping food. 

I have a NuWave oven that I have really enjoyed. I may have to try this some time.

Thought that these were even better than the fries.  Same good flavor but a little more body in the potato.  After thought was that some sour cream and chives would of rocked with these.

This looks even better than the thin cut fries!

I will give this a try on my next round. What was the cook time in the oven?

They were fluffy centered at 35 minutes, 425 degrees.  I like mine even a little more al dente, so maybe try 30 minutes the next time that I do it.
