Well the cornbread was a hit, I gave half to our friends next door and they both enjoyed it. Kind of funny the wife and I liked the cornbread with apple, they thought the cornbread with cherry was better....

For breakfast this morning I had one of the last slices and it was just as tender and moist as it was yesterday.

Looks like this recipe is a keeper.

I have to share, with the smoker, my wife says.. (36 years, life if good)..

Does everything we have to eat have to be smoked?

No I say, it can also be smoked and then grilled :)

Life is good.

Last year we ate at that fried chicken family place in St. Augustine (forget the name). It was the first time I had the datil sauce and really liked it. I brought some home and it's now gone. I can't get it locally so I have to get back there to get some soon. Very interesting flavor.

Hey Arnie,

I buy it in the powder form and it works great for baking or added to BBQ sauce. If you are interested I could send you some?

Here is a link for a local source here in town:

I have a local guy I buy from, I might be able to get it cheaper, I will let you know. But the good news is that a little goes a long way!

Not a problem this is a great place to visit, just don't plan to come when the King of Spain is here. It will be crazy since this is the 450th anniversary of the city.

My latest fave is the Jiffy cornbread casserole.
1 - 8 oz. box of Jiffy cornbread mix
1 cup sour cream
1 stick melted butter
1 can cream corn
1 can sweet kernel corn, drained
1/4 cup sugar
1 1/2 cup grated cheese, divided
Mix all ingredients minus 1/2 cup of grated cheese and put in a greased pan. Sprinkle top with remaining 1/2 cup of grated cheese. Bake at 350 for an hour.

This has been on my list to smoke.

Looks like a great recipe and the smoke could only make it better :)
