This is my 4th smoke in the #2 just put 2 racks of Stl cut ribs trimmed in at 1:00 with a pan of water & 2 pcs of hickory I will check them in 5hrs? set at 225 I tried the 321 method last time with baby backs this time it's a no peak method
Man this smoker is fantastic i'll take some pic's when done & try to post.

With an SI smoker its so easy there is no dreading tending a fire so that alone can encourage using the smoker more often. That's what I have found out on my part. Those ribs are gonna be delicious!

It is all a matter of taste! I usually do St Louis ribs at 235 for 5 hours then pull them, Sauce,and wrap them and back in for another .5 hours.

Looks good, so how were they?
My hunch is a tad longer than 5 hours total cook for perfection.
If you have leftovers they grill up very NICE the day after on low flame.

7.5 hrs They were fantastic I just dropped off a half slab to my brother & his wife said the best ribs they ever had juicy & very tender!
makes it all worth while.
