Lean Mean Chicken Machine

Take one all natural lean non-plumped up chicken, a #1 machine and what 'ya get? A smoking a'licious yard bird that's what.

Started with a 4lb very lean, no hormones, au'natural and non-injected bird. Cleaned and brined with 1/4cup Kosher salt and a 1/4 cup cane white sugar for 4hours. Washed the brine off, dried well and sprinkled with a light combination both inside and out of 1/3 black pepper, 1/3 Kosher salt and 1/3 sweet paprika. Added a small amount of cut up orange/apple/onion to the wholy end and tucked the wings in and off she went ...



Drowned the combination of pecan and peach chips to get ready for the smoke. Then installed the "chip insert" and added wood. Also made up a foil boat of the same apple/orange/onion with a small amount of water to barely soak for the start and to the smoker went the boat.



Installed double trouble probes, one for the breast and one for the thigh ... hum ... Set knob @ 250 and buttoned her up.

OK .... so 2.5 hours later the breast hits 167 and thigh hits 165 ... it's time to pull the smoking a'licious yard bird out of the #1


First the foil to the finished masterpiece .... a play on words



Next, the caramelized fruit to tease .... a picture worth a thousand words ... give or take a few hundred

Great smoking a'licious taste and a beautiful mahogany color to the eye



The Smoking-It #1 is everything I could ever want in a well made smoker which flat gets it done in the done smoking department

That's one tasty looking yard bird!! Great job.
David from Roswell,GA. My tools currently include the SI #2 with an Auber, Grill Dome, Solaire 27", Holland Grill (Companion) & Weber (Smokey Joe). The Companion & SJ are primarily used for tailgating.

TYVM JustChillin .... I am beyond pleased with moisture, texture and especially the amount of smoke ... just right with zero "too much" or over smoked bitter taste. Best of all I think the results are infinitely repeatable.

Thats one fine looking bird. Looks like you were rewarded with some very tasty yard bird. Good job!
