Big Hoss:  well, every time you open the smoking chamber you lose both moisture and heat (and residual smoke).  On ribs I don't spritz, but I sometimes do on brisket.  Typically with a long smoke (over eight hours) I'll start around the halfway point and every 90 minutes or so thereafter.  This will extend your smoking time so spritz quickly if you elect to do so.

ok thanks for the help i will post pics of when i get it and when i do my first smoke
