Great Turkey Recipe.

Ok I have a recipe that is easy to do and turns out amazing. Now this is not a Recipe where I have exact measurements.

You will need.
Fresh Rosemary
Fresh Thyme
Fresh Sage
Olive oil
Brown Sugar
Amaretto

Ok Take a small hand full of each of these and chop them up really fine. We have a bowl cutting board and a rounded knife. You will want this as fine as you can get it. This is truely the most difficult part of this recipe.

Once you get the herbs chopped up fine, Put in a bowl add Olive oil until you have a past a paste.
once the herbs and oil have turned into a paste. Put 1 cup or so of Brown sugar on top of it. Now take the Amaretto and pour that on top of the brown sugar. Stir in until you have a semi thick paste. Thinner is better.

Now take that paste and smear it under the skin every where you can get it. My wife does this as my bear paws tear the skin.

Smoke as you would normally smoke it. And be ready for an Amazing Turkey.

Sounds like a good recipe Ray.  May give it a shot someday.

Sounds like putting everything in a food processor would do the job.

We have done a garlic turkey where you rub a mix of garlic, pepper, oil and butter under the skin before smoking. Really good! IMO, the key is getting the paste under the skin. Your recipe sounds great. I will give it a try.

My technique for getting seasoning under the skin involves mixing herbs and spices in soft butter and then refrigerating so it can be sliced and put under the skin.

Loosen the breast skin first:


Slice seasoned butter that has beem chilled:


Slide seasoned butter under the skin:

See my wife always says I am not that smart. I get the job doen but it is always the hard way. LOL This is a great idea and I may try it this year. Takes me 20 min to chop the herbs. And Fresh make a difference.
