Hello everyone.  Just wanted to stop by and say, "Hi".  I have been trying my hand at smoking meats and fish for sometime now.  I received a 30" Masterbuilt Electric Smoker from my father-in-law a little over 3 years ago.  It served me well and I enjoyed it and probably smoked on it a 15-20 times a year.  However, I really wanted to buy a smoker that was a little more reliable, consistent, and well made all while staying in the "electric" realm.   

The more I researched the more the Smokin'-It brand kept popping up.  I would look at others, but I always kept coming back and looking at the Smokin'-It models.  Well, I took the plunge and bought a Model 2 and I couldn't be happier so far. 

I received it the day after Labor Day and I have done 3 smokes on it already.  My first smoke was of some St. Louis Style ribs and they were dang near perfect.  For my second smoke I tried a pork loin and I cooked about 1/2 hour longer than I should and it was a bit dry for my liking.  My third smoke was a chicken and it turned out spectacular. 

Anyway, I hope to get to know some like minded folks here and pick a few tips and tricks.

Hi Scott, and welcome from the Florida Keys (yes we are still here and will rebuild). Great forum, lots of knowledgeable people and a very friendly and helping atmosphere.

Thanks Limey.  Yeah, you guys got hit hard.  Glad to hear that you are hanging in there.  I have an Aunt and Uncle in Deland (near Orlando) and they got it pretty bad too.  Not near what you guys had, but still.  Thanks for the welcome.  Looking forward to chatting with you.
