Why did I wait so long to Smoke a belly

I must say, this will be happening again in my near future...  I made two different styles. One more of a Texas Style (salt & pepper) and the other was like brisket burnt ends.  Both were amazing.  If you haven't attempted this yet,... what are you waiting for?

I actually have a belly in my freezer that I was hoping to turn into bacon sometime...  what are the details on how to prepare it your way?  I can always buy another belly.  :)

Did you use a water pan?
