There are a lot of times where success/failure lies in the details. IMO, the temperature debate isn’t one of them. Analog temperature swings have proven that great results can be had with varying temperatures.

OK Greg. I’m going to follow your success for a flat tomorrow.  Costco has been out of brisket since 7/2.  So I ended up with a choice flat from Kroger..  Thanks for the details.  I was trying to figure whether to brine it or not.  Guess it is not necessary.
