Boneless prime rib
« on: December 24, 2016, 10:43:04 AM »
Has anybody done a boneless prime rib? I'm trying to get an idea of cooking time I will need. I have done the oil rub and seasoning for  24 hrs and it has been uncovered for almost 12hrs. Just eating at 6 so want to see what time it should be in the smoker. Going ro smoke at 200 with 5oz of cherry and hickory.
Thanks guys and Merry Christmas!

Best I can tell, about 45-60 minutes per pound is a conservative estimate, based on my 4-prime rib smokes.  searching "Christmas prime rib" or just the "Beef" section should provide insight.   As DM advises, get the Jim Baldridge's Secret Seasoning and don't worry about it.

Couldn't find that seasoning. It turned out awesome though. I used Montreal seasoning.
