4 Boston Butts in a Number 2 for the First Time.

As many of you know I am a Truck Driver and gone most of the week, so this is the reason I am doing 4 at one time in my # 2.  I have had wonderful results with 2 Butts, but never tried four at one time.

Got them from Sams as always.  Two were 15.38 lbs, put on the 2nd shelf from the bottom and then two were 13.98 lbs and placed 2 shelf from the top. 

Brined them 8 hours (or should say my wife did) with the brine solution that is on here, set the temp at 235.  Using Hickory and maple for wood.  Put them in at 12:48 a.m.

Will keep everyone posted on the results. 

Has anyone ever attempted to do 4 in a # 2?

Two important thing I have learned from this experience.

The right side seems to heat up just a tab bit more than the left side.

When you have 4 butts in a # 2, you have to be very careful about the probes.  I have all four of them probed and this morning at 5:30 two were going off as being at 190.  Half asleep and trying to figure it out was not fun for sure.

Readjusted them and closed the door.  Had to do this again one hour later.  I pulled out the top rack to adjust the probe and forgot I moved the bottom rack probes by pulling the top one out and it was against the bone.

It is 9:48 now, 9 hours in and the temp is as follows:

Top Rack:  180 & 189
Bottom Rack:  176 & 183

Both of the Higher numbers are on the right side.  Bottom rack had the two bigger ones on it.

I do 4 butts in my number 3 all the time and it is jam packed. I couldn't imagine doing 4 in a number 2!  Can't wait to hear how they turn out!

Richard - If you have an instant read thermometer, I would use it and probe each butt in several places.  While I trusted my Cookshack and trust the 3D, I always "double check" results with a thermapen. Just to be sure. Good luck.  Dave

Rick, you can use a program like Microsoft Paint to edit the file size of the picture.  I need to update this post, but see if it helps:
