Cold Smoking Cheese & Sea Salt

thinking about cold smoking some sea salt and cheese in my 3D. Is there anything special I need? I saw they have a cooling plate, but wasnt sure if I just set the 3D to the lowest temp and let it go if I would be fine.

The plate helps a lot. Failing that, cover a rack with foil, top it with an ice tray, and do the ol 250 for 15 min and off for 45 min. It works but you won't keep the temp as low as with the plate. Summer temps don't hep you either.
