Looks like the real deal, Scott!  I've been looking for a good source for dry pinquintos, but haven't settled on one yet.  Not a real common bean (I want actual Santa Maria beans), and doesn't seem like a lot of online sources.  Know of any?

I just ordered pinquitos, navy and yellow beans from Lompoc Beans.  Much better deal than the salvation sisters.  I'll let you all know what I think!  Also ordered red oak, white oak and ash box from Smokinlicious.com.  I have a hankerin' for Santa Maria BBQ!

Can't wait to see what you think of the pinquitos. I have been toying with doing a tri-tip and these would go along with it well.

I almost did, but the original has MSG...no bueno for the wife.  The "red label" version doesn't, but it's pretty pricey!  Would be almost $2/oz shipped!  I found this "copycat" recipe, at SMF, from someone who used Susie's seasoning a lot:

 Santa Maria Seasoning
4 T Salt, coarse ground
2 tsp Black pepper ground
2 tsp Garlic powder
2 tsp Dried Parsley, minced
1 tsp Sugar
 I'm gonna give this one a whirl, and I'll let you know how it is!  I plan to smoke the tri-tips first, at 200, then finish on the grill...that way, they'll get some good red oak treatment!

On our other forum, we have a guy that does a "Trisket" it is a tri-tip cooked just like a brisket. Sounds crazy, but darn good eats.

Please let me/us know on that Santa Maria seasoning...sounds like a winner.........

Got the Lompoc bean order today - fast shipping!

We tried the seasoning recipe on some ribeyes, and it was good.  Just a tad on the salty side, due to the coarser-grain sea salt I used.  Next time, I plan to use kosher salt, and up the pepper & garlic a bit.  This will be a great taste!  Red oak coming this week, so all the ingredients are coming together for a great Santa Maria BBQ night!

I will smoke the tri-tip roasts in the SI, then finish on the grill.  Low & slow, reverse sear.  I would rather be cooking them over a hot red oak-fired Argentine grill, but I don't have one.  :(   I'd love one, but I just wouldn't use it enough to justify it.  I think my alternate plan will be close enough!

Sorry, no finished pics, Bill...that might have been more than most mere mortals can bear.  LoL!  Actually, just didn't have a hand free, and too hungry this time.  I'll definitely get finished pics of the tri-tips on Santa Maria night!! ;)
