Brisket Quesadilla

Just another great use for leftover brisket!

Brisket with grilled onions, sweet peppers and Monterrey Pepper Jack cheese.

Funny how leftover brisket and pulled pork just seem to lend themselves to dishes like this!  Nice job, as usual!
