First time doing Brine question?
« on: September 03, 2015, 06:48:51 PM »
I have read the sticky from Tony on doing the Brine process.  I have all the stuff to do it with, my question is how hot do I need to get everything when I am mixing it together on the stove before I let it cool and place in Fridge?

Doesn't have to be very hot - just a "simmer" temp is fine.  You're just heating to dissolve all the ingredients and soften the spices.  I go 1/2 water to heat with the ingredients, then add ice for the other half of the water.

If you are just dissolving salt and sugar you can do that with hot tap water. If you have ingredients like pickling spice, dry herbs or cloves you will want to simmer it until the water start to change color (about 10 min) then let it sit and steep until cool.

Thanks Tony and Brian.  This my first ever BB Brine and wasn't sure how everything would work out on mixing it together.  I appreciate  it very much.
