French Fries (oven baked)

French Fries (oven baked)

Ingredients
•   1-2 large potatoes
•   2 T peanut oil or canola
•   1 T corn starch
•   Salt & Pepper

Directions
Preheat oven to 450 degrees using the convection setting. Line a pan (1” high) with foil and then place a cooling rack on it.
Scrub potatoes and cut into ½” thick fries. Place fries in large bowl of water, let sit for 10-15 minutes, rinse and then soak again. Next boil the potatoes for 4 minutes, drain and then pat dry.

Place fries in a one gallon plastic bag with oil and corn starch and refrigerate until ready to bake.

Remove fries from bag and place on rack, salt and pepper and the bake for 15 minutes, remove from oven and flip over and cook for an additional 15 minutes.

Fries should be crisp.

I recently tried a similar recipe but included a good sprinkling of Parmesan cheese, which added a nice crust.

Parmesan cheese, excellent suggestion. Instead of ketchup maybe dip in ranch dressing or marinara.
