I have to admit that this heart is still in my freezer and probably freezer burned by now. Pickling is a good idea though. I may have to try this with one of our 2016 hearts.

Greg, don't give up! I would brine it smoke it whole until about 140 and then slice, bread, and fry it up. I'll bet you will like the result.  ;)
