Penalties of Progress..

Been smokin' on the old Tejas for bout 14 yrs, all I did there was chunk oak or pecan in as needed, usually way too often. Today I spent the morning bandsawing oak firewood limbs, cleaning and weighting each one, can't believe that small amount will smoke properly, can't wait to try, got pieces weighted out at 5, 4, 3, and 2 oz. Anyone else used pin oak and wild pecan, I'm covered up in those. According to Fedex #2 is due today.

I bet both are great, Joe.  I've used a lot of red and white oak, and pecan, but never the "wild" variety (is there a difference?).  I absolutely love oak on beef!
