Thank you for trying to help me.  I appreciate it.  Haven't had time to try it out yet, but I plan on cooking some sausage on Friday so I'll have to do it before then.  I'll report back with results!

Well, I do butts at 225 and put into the smoker at midnight with probes and off to bed. I start checking around 7 AM. Time is anywhere from 8 to 14 or 15 hours.  Seems odd that one smoke will finish in 8 or 9 hours and another may take 15  hours. I have not yet figured out why but I use a  an instant read beginning at 8 hours just in case the probes are in a fat pocket that has rendered out and left the tip in a void where it cannot read accurately.  I pull if the instant read hits 190 or better and wrap and place in cooler.  As for 2 (or more butts) make sure you probe all.  Not unusual for one to finish earlier than another.

Bump the temp to 250.
It should take at least 8 hours, assuming you wrap after 5 hours.

Cook to 195.

This setting will not reset the WiFi configuration. To reset the WiFi setting on the
controller, please press and hold SET key and TIME key for 5s, until the blue WiFi
indicator starts to blink.

Well, I finally reached out to Steve since I'm having zero luck getting my smoker back up and working.  He simply said it's "a problem with your network".  I explained that I was able to turn off the 5G and connect to the smoker but then it would disconnect.  He then said it was a problem with my network.  I then referred him to this post and the app being worked on and he said tht was just for android users and it was a problem with my network.  I then asked for a third time if there was any way to do a factory reset on my smoker so that I could try that route and he didn't respond.  So now my smoker is dead in the water for now.  Frustrating.  Need a freakin' masters degree in Auber to try to figure out how to program that thing manually.  Not sure what to do next, especially since one person will see this post.
