Model 3 & 3D - The Big Brother / One Month in

I picked my SI3 up the Saturday after thanksgiving, and so far seems like one of the best culinary choices I've made. I'm really enjoying the vibe and recipes here on the forum as well. So, after one month of ownership I've smoked:
43lbs of beef jerky(20lbs dry)
35lbs of pork roasts
17lbs of beef
24lbs of chicken
3lbs of turkey(drumsticks)
10lbs of homemade sausage links(Polish)
I truly love this thing.... Can't wait to see what this year brings, besides a bigger waistline :o.

Poultry / Disney style Turkey drumsticks

I have been craving these for sometime now. I followed this recipe http://amazingribs.com/recipes/chicken_turkey_duck/disney_smoked_turkey_legs.html#
I used a little more water then suggested, for better coverage in the zip lock bag. I also used one ts less of salt based on the feedback from the post. They turned out better than expected. Thanks for looking.

Does, or has anyone ever had a mold issue or concern with our SI's? Was curious on everyone's take on cleaning/maintaining their smoker. Just trying to stay ahead of the game.  Thanks.

Jerky / Here we go

First time making jerky. My local market had bogo eye of rounds, so I grabbed two 4.5lb beauties out. Got to try out my new 7.5" nesco slicer as well, bonus. Trimmed them up, then weighed and separated. One batch is a self created marinade, while the other is a rebranded store bought honey teriyaki. I'll leave them in the fridge till tomorrow before bed. Hopefully when I wake up Thursday morning I'll have some simple, good,  jerky. Thanks for stopping in!

Poultry / Chicken smoke

Got two birds stuffed with granny smiths, carrots, vidalias, and some rosemary. A slightly spicy homemade rub with butter smeared under the skin. I also opted to throw the hearts in, never tried before, so why not.
 235℉ for 4.75hrs
Made some roasted garlic to spread on some bread as well. Thanks for looking, I'll drop some more pics in a bit..

Model 3 & 3D - The Big Brother / First smoke.

I've been grilling and smoking for years, but unfortunately my schedule leaves me no time to enjoy the finer things  :'(. Fast forward to this past weekend, SI3 purchased and seasoned. So, Tuesday I injected and dry rubbed my butt ;D and let it sit in the fridge for a few hours. I started the smoke at 10:30pm and went to bed. My garage smells fantastic btw. At 2pm I made a call to the wife (auber on it's way) to turn the SI3 down to 180 until I got home at 5:330pm.
15hrs @ 235
3.5hrs @ 180
Turned out really well, and I learned a bunch about the smoker on its first go.

Introductions / Hi from oHIo

Just picked up a model #3 today. My wife and I made a nice day trip out of it, despite the rain. Got it all cleaned out and seasoning as I write. Look forward to learning some tricks from you guys and gals.
