I'm new to this and my first question. Has anyone smoked alligator. We have a butcher here who had alligator, elk and buffalo. Going to try smoking it in my #3

Welcome to the party, Stan!  Great "first question!!"  I'd like to see someone top that! 8)   Oh, and sorry, no experience with alligator, but I do hear it tastes like chicken. ;)

I bet Walt knows how to smoke it!  I can't wait to read the suggestions you get...and you will get some.  You'll be amazed at the varied experience around here!

I havn't smoked any alligator yet. However, they are in the bayou in my backyard. My only recommendation is to cook to an IT of 145. There is no fat in the protien, so be careful not to dry it out. Alligator fat is very pungent, you do not want to eat any. You will probably want to tenderize prior to cooking. Good luck.

Thanks for the replies. I ended up marinating in dales sauce and put a rub on it and cooked at 225 till it was 150. Tasted like wild chicken. Gamey. Not bad but I like baby back ribs a lot more.:
