This is my revised recipe for Turkey soup, note you can also use chicken. For this recipe, I used sweet peppers and honey gold potatoes.
Smoked Turkey Soup
Ingredients:
1 green pepper, diced (you can also use sweet peppers)
1 large sweet onion, diced
2 T minced garlic
Red potatoes with skin on (1.5 lb.) cut up bit size.
2 carrots sliced thin or grated (I like them grated fine)
2 bay leaves
1/2 teaspoon black pepper
1 t oregano
1 t salt
3 celery stalks chopped fine
96 oz. chicken broth
4 - 19 oz. cans of white kidney or great northern beans – discard liquid
19 oz. water
1 package of Sazon Con Azafran (Sazon Goya) *you can also use 1-2 t curry powder
2 lbs. smoked chopped turkey or chicken
2 lbs of great northern beans (pre-cook beans and discard water)
7 oz. Mexican shreaded four cheese blend (add this the last hour or so)
Directions:
Combine turkey, beans and all ingredients except the cheese and starch into a large pot. Cook over high heat and bring to a boil. Reduce heat and simmer 3-4 hours, stirring occasionally.
You may need to add some additional water.
After 3-4 hours make sure beans and potatoes are tender, add additional salt as needed, then add starch to thicken and cheese.
*Add starch as desired to thicken!

My wife says this is one of the best things I make.... Me I would rather have pizza or brisket, just saying......
I noticed on my last Turkey recipe it was not really exact. So this time I made sure to keep track of the exact amounts for the soup.
But the real key here is the smoked Turkey!
