POTJIEKOS

POTJIEKOS is South African for Pot Food

It is cooked in a round shaped cast Iron pot called a Potjie  Pronounced" POI-KEY
 

OK American Kudu aka big chuck



Clean celery, turnips, potatoes, carrots



Fire up the Potjie pot
And brown meat.





Make a roux 1/4 cup flour and olive oil
Be careful stirring constantly note starting color. When it gets to a golden brown quench with 1/2 gal. water or you will burn the roux.









Throw in meat, veggies, seasoning.  Seasoning tbs of Garlic, salt, pepper, cayenne, parsley, coriander,  4 bay leaves, 1/4 cup paprika.





Now one gallon of water and a WHOLE small jar of "better than bullion" beef base. That's right the whole thing!



Cover bring to a rolling boil, then reduce flame to the lowest you can go.  It will take 30 minutes for this 50 lb cast iron #8 potjie to cool to a simmer.  Use a hammer to take the lid on and off.







You be the judge I add 2 tbs of corn flour and 2 tbs of flour at the 1.1/2  hour mark to thicken. I like it a bit soupy.

At the 2 hour mark it's done.





Makes 2.1/2 gallons of potjiekos.

Hell I forgot, add in a beer!

A real purist would use this setup, I have one but it's used around a camp fire, not on the patio.

LOL so true. Whenever I make these cast iron delights people rave at the flavor. Especially at chili cook-off contest.
